Gingerbread Pancakes - as posted by the lovely and talented Tig's Toy. wub.gif

The batch says it makes 8 - 4" pancakes. It will depend on how big you make the pancakes and how many pancakes you like as to how many it will actually feed.

We feel the pancake batter is too thick and add a little water to thin. Otherwise they are very very heavy pancakes and you probably could eat one.

Boring recipe without the graphics

3/4 cup whole wheat flour
1/4 cup all purpose flour
1 tsp baking powder
3 Tbs brown sugar packed
1/2 tsp ground ginger
1/4 tsp salt
1/4 tsp cinnamon
1/8 tsp ground cloves

Place 2 teaspoons instant coffee granules in 1/4 cup boiling water; stir until dissolved and cool completely.
Blend in 2/3 cup milk, one egg and one tablespoon oil, set aside.
Add pancake mix to large mixing bowl.
Make a well in the center.
Pour liquid mixture into the well;
Stir until just mostened.
Add water to thin as necessary.
Heat 1/4 cup of batter on a greased griddle until bubbles form along the edge.
Flip and heat until golden.
Makes eight 4" pancakes.

Enjoy Everyone! It makes a great tradition.
