Crock Pot Season

I made stuffed peppers in mine this week~i don't follow a recipe though, but any would do. I have several crocks ranging in size from small round to a pretty large round. Then last year I bough this one so I can do stuffed peppers, cabbage and beef brisket w/o rolling it around the inside of the crock.

Ann's Ruby Chicken

2 lb Chicken pieces
1 Onion, medium, chopped
2 Tbsp Oil
2 tsp Salt
1 tsp Pumpkin pie spice
1 cn Orange juice, frozen
2 tsp Orange rind, grated
1 lb Cranberries
1 cup Sugar

Brown chicken pieces and onion in oil and salt.
Add all ingredients to crockpot. Cook on low for
6-7 hours or until chicken is cooked through.

Apple Pork Roast

2 pounds Boneless pork
1 tablespoon Cooking oil
1 Carrot -- small chunks
2 Stalks celery -- chopped
3 tablespoons Quick-cooking tapioca
1/4 cup White wine
1 teaspoon Beef bouillon granules
1/4 teaspoon Salt
1/4 teaspoon Ground cinnamon
6 ounces Frozen apple juice concentrate
(thaw but do not dilute)

Trim any fat from pork. Cut in half, if necessary, to fit into crockpot.
Place carrots, and celery into bottom of Pammed crockpot. Sprinkle tapioca
over top. Add apple juice concentrate combined with other ingredients and
add. Cover, Cook on Low for 10-12 hours or on high for 5 to 6 hours.

Beef Chow Mein

4 ounces mushrooms, sliced and drained
1 1/2 pounds round steak, cut in small strips
4 stalks celery, finely chopped
2 medium onions, finely chopped
1 cup hot water with 3 beef bouillon cubes
3 tablespoons soy sauce
2 teaspoons Worcestershire sauce
1 pound can chinese vegetables
2 tablespoons cornstarch and 2 tbsp. water

Combine mushrooms, beef, celery, onions, water with
bouillon, soy sauce, and Worcestershire sauce. Cover;
cook on low 8-9 hours. Turn heat to high. Add
chinese vegetables and cornstarch mixed with water.
Stir well and simmer for 15-20 minutes or until vegetables
are heated through and sauce has thickened.

Carnitas

2 to 4 lb. pork butt roast
4 garlic cloves
1 fresh jalapeno pepper
1 bunch fresh cilantro
1 can lite beer
corn tortillas

Insert garlic cloves in roast; place in
crock pot with whole pepper and half bunch
of cilantro which has been chopped. Season
to taste. Pour in beer. Cook on high 4 to 6
hours until fork tender. Remove meat; shred.
Serve in steamed tortillas with tomatoes,
onions, cheese and cilantro.

Corned Beef & Cabbage (Crockpot)

4 1/2 Pounds Corned beef brisket
2 Medium Onions -- quartered
1 Cabbage head -- cut in small wedges
1/2 Teaspoon Pepper
3 Tablespoons Vinegar
3 Tablespoons Sugar
2 Cups Water

Combine ingredients in removable liner with cabbage on top.
Cut meat to fit, cut cabbage into chunks. Place liner in base.
Cover and cook on low 10-12hours; high 6-7 hours or auto 6-8 hours.

Indonesian Pork

4 to 5 lb pork roast
salt pepper
1 cup hot water
1/4 cup molasses
1/4 cup prepared mustard
1/4 cup vinegar
1/4 cup orange marmalade
1/4 teaspoon ground ginger

Place metal rack or trivet in bottom of crockpot.
Sprinkle roast with salt and pepper; put on trivet in
pot. Pour hot water over roast. Cover and cook on
low for 8 to10 hours or until done. Remove meat from
pot. Place on broiler pan or oven proof platter.
Combine molasses, mustard, vinegar, marmalade, and
ginger. Brush over cooked pork.
Brown in 400 oven for 30 minutes, brushing several
times with sauce.

WoW! Thanks, Big Dog! The carnitas sounds good (they all sound good)...I have a bit different recipe, but I'm gonna defiantly have to try this. Easy dinner....let that cook all day and come home and chop up cilantro, onions, cheese and make some guacamole and I'm in Mexico (said as the Mexicans pronounce it).

1 lb boneless beef chuck
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 teaspoons olive or vegetable oil
3 cups 1-inch pieces peeled sweet potatoes
2 teaspoons finely chopped garlic
2 whole cloves
1 dried bay leaf
1 stick cinnamon
1 large onion, cut into eighths
1 can (28 oz) Progresso® whole peeled tomatoes with basil (Italian style), undrained
8 dried apricots, cut in half
Chopped fresh parsley, if desired

1. Remove excess fat from beef. Cut beef into 1-inch pieces. Sprinkle beef with salt and pepper. In 10-inch skillet, heat oil over medium-high heat. Cook beef in oil about 5 minutes, stirring occasionally, until brown.
2. In 4- to 5-quart slow cooker, mix beef and remaining ingredients except apricots and parsley. Cover; cook on Low heat setting 6 to 8 hours or until beef is tender.
3. Stir in apricots. Cover; cook on Low heat setting about 15 minutes or until apricots are softened. Discard cloves, bay leaf and cinnamon stick. Sprinkle stew with parsley.

We made this Friday in our slowcooker and it was damn good but instead of the rotisserie chicken, we used canned chicken because I thought to do it last minute and Kroger didn't have anymore chickens left Thursday when we went.

Chicken Chili

1 rotisserie chicken, pull the meat off & cut up into little
chunks
1 - large jar of the Great Northern Beans
1 package of shredded cheddar cheese (the two cup jobber)
1 jar of Salsa (El Paso Medium tastes the best)
1 Tablespoon chili powder
1 teaspoon ground Cumin powder

Dump everything into a crock pot & stir to mix. The only water you really use is what you use to swish the jars of beans & salsa clean.
Heat & serve when cheese is melted.

I made fall off the bones ribs in the crock pot yesterday.

I havent tried these yet..but the recipe looks interesting and the combos sound delicious !!

BANDITO BEANS

1 pound mild pork sausage
1 (15 ounce) can wax beans, drained
1 (15 ounce) can cut green beans, drained
1 (15 ounce) can lima beans, drained
1 (15 ounce) can black beans, drained
1/2 (28 ounce) can barbeque baked beans, with liquid
1 (15 ounce) can chili beans, with liquid
1 (6 ounce) can tomato paste
1 cup packed light brown sugar
1/4 cup barbeque sauce
1 small green bell pepper, diced
1 small yellow onion, diced
1 teaspoon fennel seed
Add to Recipe Box

DIRECTIONS
Place sausage in a skillet over medium heat, and cook until evenly brown. Drain grease, and transfer sausage to a slow cooker.
Into the slow cooker with the sausage, mix wax beans, green beans, lima beans, and black beans. Mix in baked beans with liquid and chili beans with liquid. Stir in the tomato paste, brown sugar, barbeque sauce, green bell pepper, onion, and fennel seed.
Cover slow cooker. Cook on Low at least 5 hours.

* 1 jar dried beef, about 2 1/2 ounces, rinsed
* 6 boneless chicken breast halves, skin removed
* 6 slices bacon
* 1/4 cup sour cream
* 1/4 cup flour
* 1 can cream of mushroom soup, undiluted
* 2 to 3 tablespoons dry white wine, optional

On bottom of greased slow cooker, arrange dried beef. Wrap each piece of chicken with a strip of bacon; arrange on top of dried beef. In small bowl, combine sour cream and flour; add soup and wine, if using, and blend thoroughly. Pour over chicken mixture. Cover and cook on LOW for 6 to 8 hours. Serves 6.

EASY CHICKEN DELICIOUS: This one is a monthly cook at our house in the winter, very easy, 15 minute prep time.

-Enough thick boneless and skinless chicken breasts cut into thirds to cover bottom of crock pot.
-1/3 cup Pinot griggio or other white wine
-1 can each of cream of mushroom soup and cream of celery soup
-grated parmesan cheez
-salt, pepper, and paprika
-lemon juice

1.Season chicken coating evenly with seasonings.
2.Sprinkle enough lemon juice just to cover bottom of crock and then add chicken and sprinkle a little bit more to lightly cover top of chicken.
3.Mix soups, without adding water, and wine together and pour over chicken.
4.Sprinkle grated Parmesan cheez over top of all and cook.
5.Cook on low for 8-10 hours or high for 4-5 hours. My way is to cook on high for 3 hours and then switch to low for 2 hours.

DEVILED CHICKEN AND VEGETABLE SOUP: Made this last Sunday and it is about to go in the crock again. I use a small crock pot so you could double this for the larger ones.

-1 pound boneless skinless chicken breasts or thighs cut into bite size pieces
-1.5 cups of corn frozen, canned or fresh
-1 carrot diced
-1 LARGE red skin potatoe diced
-1 medium onion diced
-2 stalks celery diced
-2 teaspoons of garlic diced(or double this)
-3 tablespoons of spicy brown dijon style mustard
-1/2 teaspoon of black pepper(or double this)
-2.5 cups of vegetable juice
-1, 14oz. can of reduced sodium chicken broth

1.Add all together and cook on high for 4-5 hours or low for 8-10 hours.

ITALIAN PORK WITH MASHED SWEET POTATOES OR BUTTERNUT SQUASH

-1 tsp fennel seeds, crushed if you prefer
-.5 tsp oregano
-.5 tsp garlic powder
-.5 tsp paprika
-.25 tsp salt
-.25 tsp black pepper
-1.5-2 lb pork roast(I use a loin roast but any cut will do)
-1 lb sweet potatoes or butternut squash peeled and diced into 1-2" pieces
-1 cup chicken broth

Add potatoes/squash to the bottom of the crock pot and pour the chicken broth over it. Mix all dry ingredients and rub into pork roast. Place pork on top of potatoes/ squash and cook with the lid on. 4-5hrs on high, and 8-10hrs on low.

Strain potatoes/squash and mash. You can add butter etc. but you won't need to since the seasonings and flavor from the pork will have marinated the potatoes/squash.

Have to report, both were good! I could not believe how the chicken just fell apart. I really like that. I threw in some capers on my plate. Gonna add extra mushrooms next time, had a request from my daughter. I've done whole chickens in the crock, but never boneless/skinless...was really surprised how well it cooked.

No problem I got that one from my aunt a couple of years ago and it doesn't get much easier and tastier than that. I usually boil up some red skins and whip them with the skin on and add pepper jack cheez, butter, salt, and pepper. The soup that the chicken cooks in doubles a s a unique flavored gravy.

Not sure about being a good cook but I like to eat good food and I don't like to eat out so I am always messing around in the kitchen. My wife has worked afternoons since I met her so I had the choice about a decade ago to either get in the kitchen or keep crying about it and ordering out. I chose the kitchen.

I made a pretty good crock dinner last night~I never measure, so here is the ingredients. make to your liking.

lean, boneless pork country ribs~salted/peppered and put in bottom of crock.

garlic on top of the pork (could add some minced onion if you wanted, too)

canned mushrooms drained, on top again

top off with sauerkraut, if you like add a pinch or two of caraway seeds

pour a small amount of low sodium/low fat chicken broth in

I used a Auto setting (1 hr. on high, followed by low) and cooked until the pork was tender.

Serve with fresh mashed potatoes.

Ok, today I made a mixed beans/legume soup in the crock. We'll be eating for dinner tomorrow. It's gotta sit in fridge overnight and let the flavors really burst. The couple of sips I took tonight, it was good.

We'll be on a vegetable protein and fiber high all week, lol.
