I think a medium size Pike (28-34) is about the best eating. Most people shy away from them because of the Bones. If done right, you can get boneless fillets easily from a pike.

I noticed that no one has mentioned smelt. Probably because they've been so hard to come by in recent years. I have to say fried smelt and smoked smelt are both in my top ten fish dishes to eat.

#1 - Fried Lake Perch from cold water
#2 - Walleye
#3 - Whitefish

For the record - I have tried salmon a half dozen times and just can't get into it unless it's smoked with cajun seasonings.

Hey I've got walleye in the freezer - lets eat!!!
