Man I just ate lunch and this still sounds great. Now I need to find me a goose breast or two.

Had some goose tonight with the Jack Daniels Duck recipe from the Cook Book forum. The dish had great flavor but between the marinade and the sauce, you really could'nt taste the goose meat. The meat had good texture and was fairly tender. Its a good one to try.

I like making it like I make corned beef. I put it on a couple slices of rye bread with sauerkraut and 1000 island, and voila, you have a Canadian Ruben.

Also very good turned into jerky.
