I lock mine everytime I go out. Not just for theft reasons but to make sure the boat stays attached to the hitch. About 4 years ago the pin came out of my coupler. Went over a set of railroad tracks and off came the boat. The safety chains luckily caught and the boat smashed into the back of my Tahoe. Ironically enough the only damage to the boat was the end cap on the trolling motor. I was surprised. The truck, well....that was a whole other issue.

I keep the insert locked as well as the trailer so that it can't be removed. I have heard of people returning to find their trailer missing. On smaller boats I have heard of a couple people who's trailer was taken, then the left the boat to get help and when they returned their boat was also gone.
